The tradition of All Hallows Even (or evening) started in Ireland. On the evening of the Catholic holiday, All Saints Day, folk celebrated the remnants of a more ancient holiday. Based on the pagan holiday Samhain, the new year, this day was considered a time when the separation between the world of spirits and the world of people was at its thinnest. Masks were worn to ward off bad spirits and offerings of sweets and food were left outside the door of the house to attract good spirits. From these traditions come our own wearing of costumes and masks and giving candy.
When the Irish immigrated to North America, they brought the holiday with them. The trip across the Atlantic changed the holiday in some ways. Originally, folks carved a turnip or rutabaga into a candle-lit lantern. They found that the pumpkin, a native North American vegetable, was far better suited for carving easily and so the pumpkin became the Jack-O-Lantern we know today.
“Jack O Lantern” gets its name from an old Irish story about a Man named Stingy Jack who outwitted the devil, only to be cursed to wander the night with a lamp made from a carved vegetable.
North America, The United States and Canada in particular, are the world’s foremost celebrants of All Hallow's Eve. However, there are now participants in New Zealand, Australia, England, and Japan!
